Mjulnir, this is a mewmew!

Meet Mjulnir, or as I call him, Master Mew! He is the newest addition to our little family.

We wanted to get a dog, but we are still in an apartment and Namon didn’t want to get a dog without having our own yard. Meanwhile, Yuki was very lonely.

Namon’s mom has a farm, and she always has kittens. In fact that is where Yuki came from! Well she showed us a photo and offered Yuki a friend and we took her up on it.

Yuki is not pleased!

We are hoping this changes!

He’s Home!

Working out is so much more fun when he is here to do it with me! ❤️

Today was the Incinerator! I’ve been calling it the burninator so much that Namon went right passed the workout looking for B instead of I!

Namon is finally noticing his own gains. I was SO happy this morning and he caught a glimpse of his back muscles and could see all the payoff of his hard work.

He still refuses to take any photos until after 120 days, but it is always nice to know you are making progress.

So glad it is Friday! Even though I know I’ll be grading over the weekend. I hop you all have fun plans for the weekend!

I’m planning on spending some time with my Love! I miss him when he’s gone! ❤️

Beef with Beets Borscht

This turned out wonderful!  Namon agreed, I wouldn’t have posted otherwise.  We were already in jammies so Namon didn’t make an approval appearance, but he really liked it. 🙂  Which is good, since this meal was celebrating his return home!  I miss him when he is away.

Anyway, for this rather hearty meal you will need:

Chuck roast – about 1 1/2 lbs

2 large carrots

4 medium beets (I used five small ones)

1 onion

4 cloves of garlic

3 cups of broth – I had to use chicken cause we didn’t have beef

6 slices of thick bacon

I used about 1 tablespoon of dry dill (the recipe called for 6 sprigs fresh)

2 bay leaves

3 tablespoons honey (I used raw)

3 tablespoons red wine vinegar

3 cups of cabbage (I measured, Namon laughed!)

And here is the video!

We may improve upon this recipe soon!  Namon has some ideas.  He still really liked it just as it is, but I LOVE that he is always able to change things up and make them better. Me, I’m a recipe girl through and through. 😉  And that’s okay!

Let us know what you think, and how you would improve the recipe!

One of those days

Guess what I’m having!

I forgot to set my alarm, so I got a late start to my day. Normally this isn’t that big of a deal when Namon is out of town, but today I was planning to make a crockpot meal to celebrate his return.

I love the crockpot because usually it is very easy.

This meal was not. At least, not when you are fighting the clock because it needs six hours to cook and today was a long workout day!

Eccentric Lower, and Ab Ripper X3.

I didn’t even shower, I just started to prep in my workout clothes!

I made a HUGE mess in the kitchen! It is pretty much covered in grease, I will have to mop, and I made a ton of dishes. I even broke a tablespoon while trying to get my honey out of the jar. This had better be the best meal ever.

We all have those days, guys! All of us! I’m gonna do my best to shake this off, clean my kitchen, and turn this day around.

If the meal turns out I will glad share my video (I look so over everything in the video, but hey!) and post the recipe.

Good luck out there! I’m gonna shower!

Poached Egg on Toast with Mushrooms and Bacon

This is the most amazing breakfast ever! It is also very impressive. 😉  Just saying!

Okay, so this recipe is a little more complicated, but with a little practice poaching eggs, you’ve got it.  Here, just Namon talk you through it:

For this you will need:

Bread, toasted

Butter or olive oil

Salt and pepper

I know it looks a little complicated, but the hardest part is poaching the eggs, I promise!  It IS delicious. Probably my favorite breakfast.  It may not be the healthiest breakfast, but everyone needs a cheat day.

Let’s Not Say “Can’t”

I love my yoga days! Even though I still fall over sometimes when I try it.

I’ve been doing X3 Yoga since the start of the program, and I still stumble. I’m getting better! I can actually stand in Warrior 3 for awhile. I can’t quite look up in Half Cresent from there, but I also am not falling as often.

I still can’t do Crow.

No. Wait. Let’s not say can’t.

Can’t is admitting defeat, and I am not defeated, I’m just struggling.

Two months ago I was struggling with Warrior 3, and what did I say just a moment ago? Now I can.

We all struggle somewhere. Struggles just mean we are learning. We should never give up over struggles. Instead, we have to keep trying. Keep struggling. Until we are strong enough to overcome.

I struggle with many things, both fitness related and not. However, I’m going to try my best to stay positive. As cheesy as it sounds, I only fail if I stop trying.

Happy Wednesday, friends!

Homemade Risotto Bianco

This was delicious!  I love risotto!  I thought this was a more difficult recipe, but you will see that Namon claims it is easy just time consuming.

You get the extra video tonight because I have a breakfast video to post for tomorrow, and then I will be making a stew on Thursday. Hopefully! 😉

For this risotto Namon used the chicken stock he made in another video, white wine, rice (he will tell you which kind), salt and pepper and parmesan cheese.

Actually here, just see the video:

This is gluten free, but not dairy free.  We discuss a little about how you can maybe make it dairy free.

Let us know if you try it!  How did it work for you? How would you improve this? 🙂 Let me know in the comments below!

Making Your Own Chicken Stock

No photos for this one, but before Namon made that lovely risotto from a few posts ago, he made his own chicken stock.

Making your own stock doesn’t have to be difficult, it  just takes a little time.  Namon will show you how to carve a chicken, and then how to use what’s left to make a very rich and delicious stock that you can use in your soups, or risotto.

I promise that I will also post the risotto video so you can make your own risotto bianco!

Improvements Happen a Little at a Time

And then all at once, especially if you aren’t paying attention.

Today was so-all-the-squats day, otherwise know as Triometrics in the P90X3 world. Now, I have been so focused on abs, which was my first ever goal, and arms because I realized that a small child could beat me at arm wrestling, that I totally haven’t noticed what has been going on with my legs at all.

They are getting kinda ripped.

After 30 minutes of doing the most ridiculous squats I have ever done (Hell’s Chair and Jack Squats are my two least favorite), my muscles were so pumped it felt like I was gonna hulk out of my leggings!

I’ve heard the term “pumped” but this was really the first time I actually felt pumped.

Oddly enough, not the biggest fan. Pumped isn’t like a runner’s high were you feel invincible. Instead it really is more like the Hulk where you are looking at your legs going, what in the world?!? Whose legs are these?

I’ve been watching the numbers on the scale bounce back and forth five pounds, and it has shown me the scale just can’t be trusted. Realizing you worked so hard you pumped up your quads, that can be trusted.

Hang in there, everyone. Take photos, take measurements, ignore the scale, and you will find yourself suddenly surprised some day by the results of all your hard work!

The Benefits of a Buddy

Eccentric Upper, so nothing but the muscles I struggle with the most! Day one of working out with no Namon. It’s funny because even though I’m the one pushing him most mornings, all of my motivation comes from having Namon to work out with.

I never really even knew that until I tried working out alone.

This is why, if you aren’t feeling motivated, it is good to have a support system that will hold you accountable.

Everyone goes through the I-don’t-wanna’s every now and then.  I’m a morning exercise person, and most of the time I just want to get more sleep.

I’m blessed that my workout buddy is my husband. However, when he travels for work I still have a solid support group that I keep in touch with, and who help to keep me going when I am dragging by myself.

I hope you have a support group to hold you accountable! If not, message me or comment below and I will gladly add you to mine!

We fitness folks have to stick together right?

Good luck out there on this Monday morning! And enjoy the solar eclipse! Be safe!
